The Auberge
The Auberge is a traditional rural auberge, which provides good home cooking food using local and regional products. You can try:

  • Cassoulet (the speciality of Castelnaudary) cooked on a wooden fire. With our cassoulet we are honoured and proud to have reached the level to join “The Universal Academy of Cassoulet”)

  • Home-made Charcuterie
  • Duck

  • Stuffed pork
  • Home-made soup
  • ...

Served with a delicious regional wine, for example, Corbières, Malepère, the traditional Blanquette de Limoux and many others.
